I’m not surprised that Christina Aguilera belongs to this prestigious list. She is after all one of the most talented singers and performers ever but I had some surprises too. Like I didn’t realize that Barbra Streisand is selling albums or anything!

Forbes has just come out with their list of 2007’s 20 highest grossing female musicians, and the results are pretty surprising.

Britney Spears sent Christina Aguilera a gift for the baby

Awww, this is so sweet. Britney Spears may be going through a lot these days and yet she has not forgotten to send a little pressie for her ex-Mouseketeer mate, Christina Aguilera. I wonder if it was Britney’s personal assistant who picked up the gift though? Lol

Britney Spears has sent Christina Aguilera a gift to congratulate her on the birth of her first child.

The ‘Gimme More’ singer - who has lost custody of her own sons Sean Preston, two, and 16-month-old Jayden James - has sent a collection of baby clothes to her former pop rival for her two-week-old son Max.

A source at children’s clothing company huddybuddy.com revealed: “Britney ordered the entire collection of onesies to be sent to Christina. The slogans on the suits she ordered include ‘Diaper Dude’, ‘I don’t play well with others’, ‘I didn’t nap today’ and ‘I know I’m gorgeous’.”

Is Angelina Jolie Pregnant Again?

angelina_jolie Angelina Jolie has been at the center of pregnancy rumors a lot lately but the beautiful actress has yet to confirm or deny anything.  She and boyfriend, Brad Pitt, were at the SAG awards last night and her outfit will only fuel the baby chatter. 

Her breasts are looking pretty full to me and is that flowing dress hiding a little baby bump?  Only time will tell but, in the meantime, she and Brad gave everyone something else to talk about.  They were so lovey dovey that it’s been on sites all over cyberspace today.

I wasn’t sure how I felt about Brangelina at first but they grew on me.  What a pair!

Eggplant & Lentil Terrine with Morroccan Spices

I have been so buys lately I have not involved myself in the Jousts and the other roundups that I normally do. I wanted to do another terrine for WTSIM… at The Passionate Cook, a savory one this time, and the ingredients Dharm had picked for the Leftover Queen’s Royal Foodie Joust were:

  • eggplant
  • lentils
  • cinnamon

And so, I thought perhaps a vegetable terrine with Morroccan overtones. There is no real recipe for this, I just tasted and adjusted as I went..but I did measure so I could repeat the recipe.

Eggplant separates the layers of terrine, with a spiced/sweet lentil filling and onion/garlic filling between. Serve hot or at room temp.

This went far beyond my expectations in the sheer burst of flavors that kept hitting my taste buds. I suggest a french bread, a salad, and a simple poached pear (with Contrineau) dessert to round out the menu.

I still need to unmold it and get the finished pictures.

The Lentil Layer

2 1/2 c french green lentils, cooked.

1 c raisins

2 tsp cinnamon

1/2 tsp ginger

1/2 tsp nutmeg

1 tsp cumin

1 tsp chipotle granules or other hot pepper to taste

1-2 tbs sugar

2 tbs lemon juice

1 egg

Mix and then puree in a processor. Taste to adjust seasonings. Set aside.

The Onion/Garlic Layer

2 large onions sliced

2 heads of garlic, peeled and cloves sliced in thin slices

1/4 c butter

1/2 c whole milk ricotta

1 egg

melt butter in pan, turn heat to medium low, place garlic and onions in and sweat until tender, sweet and transparent. Do not let brown.

Puree with the ricotta and onion. Adjust seasoning and set aside.

Eggplant Layer

1 medium eggplant

1 1/2 c Mozzerella

Slice eggplant thin, lengthwise, and soak in salted water for 1 hour. Drizzle with olive oil and bake at 350 until tender but not creamy.

In a greased loaf pan (best to line it with foil but I was out) put one layer of eggplant, then half of the lentils, then all of the onion mixture. Repeat with the rest of the lentils, then eggplant and then top with Mozzarella. Cover with foil and bake at 350 in a bain marie for 1 1/2 hours. Let cool to room temp. Refrigerate over night if possible.

Warm and unmold onto a plate. Slice to serve.

Serves 6-8

Christina Aguilera thinks marriage is sacred

Did you know that unlike her fellow ex-Musketeer, Christina Aguilera has turned down numerous offers to star in a reality television show, because she wants to keep her marriage sacred. Although, she is actively searching for a role to take as an actress. That is where she wants to go next, professionally.

Oh that’s nice, Christina wants to ‘diversify’ — can’t wait to see what she and Katie Holmes come up with their movie, Humboldt Park. I also like that she stood her ground and didn’t give in to pressure about starring in your reality show. I think too many stars do that now.

Victoria Beckham is the latest celebrity to shed their clothes for Marc Jacobs. The line of t-shirts is sold to support skin cancer research.

Tara Reid: Lindsay Lohan and Paris Hilton deserve jail

Ok….it’s either Tara Reid just wants the press or she really is fed up with all the bad press she’s been getting!

Hollywood actress Tara Reid has slammed fellow stars Paris Hilton and Lindsay Lohan - stating they deserved the punishment they received for breaking the law.

The American Pie star feels she is unfairly portrayed as a party animal, insisting she has never done anything to deserve the bad press - unlike Lohan and Hilton.

The 32-year-old actress, who has become more famous for her alleged wild antics than her film roles in recent years, believes she is often punished for simply enjoying herself.

She says: “What have I ever really done? Dance on a table? When Lindsay Lohan and Paris Hilton got their DUIs (drinking under the influence arrests) they got punished, they deserved it.

“But my punishment, I don’t feel like it fits the crime. I don’t understand why people punish others for being happy.”

Daring Bakers Challenge Recipe: Lemon Meringue Pie

This months challenge was Lemon Meringue Pie. YUM!

Lemon Meringue is one of Marc’s favorites. This was a fun challenge and because it was a challenge I took the extra time to pipe the meringue. Sorry to say that by the time I realized MOST of my pictures were blurry the pie was LONG gone.

One of the things I normally do differently is to bake the meringue separately from the pie and add it on before cutting and serving. This keeps the meringue crispy and keeps the filling from weeping under the meringue, you know that watery layer that sometimes happens when you cut into the pie? To bake the meringue separately just bake it on parchment in a round that is about 1/2 inch bigger all around that the pie.

I baked this meringue on top of the pie, as the instructions stated, and had no problem with weeping. Check out the other Daring Bakers…there are some incredible pies!

Lemon Meringue Pie
Makes one 10-inch (25 cm) pie

For the Crust:
3/4 cup (180 mL) cold butter; cut into ½-inch (1.2 cm) pieces
2 cups (475 mL) all-purpose flour
1/4 cup (60 mL) granulated sugar
1/4 tsp (1.2 mL) salt
1/3 cup (80 mL) ice water

For the Filling:
2 cups (475 mL) water
1 cup (240 mL) granulated sugar
1/2 cup (120 mL) cornstarch
5 egg yolks, beaten
1/4 cup (60 mL) butter
3/4 cup (180 mL) fresh lemon juice
1 tbsp (15 mL) lemon zest
1 tsp (5 mL) vanilla extract

For the Meringue:
5 egg whites, room temperature
1/2 tsp (2.5 mL) cream of tartar
1/4 tsp (1.2 mL) salt
1/2 tsp (2.5 mL) vanilla extract
3/4 cup (180 mL) granulated sugar

To Make the Crust:
Make sure all ingredients are as cold as possible. Using a food processor or pastry cutter and a large bowl, combine the butter, flour, sugar and salt.Process or cut in until the mixture resembles coarse meal and begins to clump together. Sprinkle with water, let rest 30 seconds and then either process very briefly or cut in with about 15 strokes of the pastry cutter, just until the dough begins to stick together and come away from the sides of the bowl. Turn onto a lightly floured work surface and press together to form a disk. Wrap in plastic and chill for at least 20 minutes.

Allow the dough to warm slightly to room temperature if it is too hard to roll. On a lightly floured board (or countertop) roll the disk to a thickness of 1/8 inch (.3 cm). Cut a circle about 2 inches (5 cm) larger than the pie plate and transfer the pastry into the plate by folding it in half or by rolling it onto the rolling pin. Turn the pastry under, leaving an edge that hangs over the plate about 1/2 inch (1.2 cm). Flute decoratively. Chill for 30 minutes.

Preheat oven to 350ºF (180ºC). Line the crust with foil and fill with metal pie weights or dried beans. Bake for 20 to 25 minutes. Carefully remove the foil and continue baking for 10 to 15 minutes, until golden. Cool completely before filling.

To Make the Filling:
Bring the water to a boil in a large, heavy saucepan. Remove from the heat and let rest 5 minutes. Whisk the sugar and cornstarch together. Add the mixture gradually to the hot water, whisking until completely incorporated. Return to the heat and cook over medium heat, whisking constantly until the mixture comes to a boil. The mixture will be very thick. Add about 1 cup (240 mL) of the hot mixture to the beaten egg yolks, whisking until smooth. Whisking vigorously, add the warmed yolks to the pot and continue cooking, stirring constantly, until mixture comes to a boil. Remove from the heat and stir in butter until incorporated. Add the lemon juice, zest and vanilla, stirring until combined. Pour into the prepared crust. Cover with plastic wrap to prevent a skin from forming on the surface, and cool to room temperature.

To Make the Meringue:
Preheat the oven to 375ºF (190ºC). Using an electric mixer beat the egg whites with the cream of tartar, salt and vanilla extract until soft peaks form. Add the sugar gradually, beating until it forms stiff, glossy peaks. Pile onto the cooled pie, bringing the meringue all the way over to the edge of the crust to seal it completely. Bake for 15 to 20 minutes, or until golden. Cool on a rack. Serve within 6 hours to avoid a soggy crust.
